Perhaps the best flavor and smell is that of freshly ground homemade whole wheat bread. This bread is my favorite recipe for a rustic bread with a sweet nutty flavor. Using freshly ground wheat flour is the secret that takes a good whole wheat bread recipe, to the best!
I love to make this delicious bread recipe when my kids are at school. Then when they come home, they are greeted by the incredible smell of the fresh homemade bread coming out of the oven. We eat it warm with a thick spread of butter. And we eat way too much!
How do you make whole wheat bread from scratch?
The key ingredient that makes this recipe so delicious, is the freshly ground RED wheat flour. I have used white wheat before, but you don’t get the same nutty flavor as when you use red wheat. It pairs with the honey so well. I like to grind my wheat in the NutriMill. I set it to grind slower to make a finer flour.
What’s the best recipe for homemade whole wheat bread?
This recipe yields two loaves. You can double it, and it will still fit in a Bosch mixer.
- Add 2.5 cups of hot tap water to Bosch mixer or large bowl. My water is about 115 degrees.
- Add 3 cup of freshly ground red wheat flour and mix.
- Then add 1 TBSP active dry yeast, THIS is my favorite kind of yeast!
- Add 1 TBSP salt.
- Add 1/3 cup of vegetable oil. I have used butter here, and it has turned out similarly delicious.
- Add 1/3 cup of honey.
- Mix again, incorporating all ingredients.
- Finally add another 3 to 3.5 cups of red wheat flour. You want the dough to be tacky to the touch, but not overly sticky, and pulling away from the sides of the mixing bowl.
- Mix for 5 minutes in a mixer, or 8 minutes by hand. I have done this by hand before. While cumbersome, it is worth it!
Detailed Instructions For Bread Dough
- Spray a large bowl with cooking spray, and place the dough in the bowl.
- Cover the dough with plastic wrap, which I spray with cooking oil to prevent sticking.
- Let the dough rise till double in size. I like to put it in the sunshine but will put it in a warm oven on a cloudy day.
- When bread has risen, punch down. Divide dough into two loaves.
- Dont worry too much about the proper way to shape the dough into loaves. I like to tuck it under itself until it is a longer oval dough shape, I place it in the loaf pans and press it down.
- Again, I like to cover it with plastic wrap to keep the dough moist and help in the rising process. Just make sure to spray the plastic wrap, so it doesn’t accidently deflate the bread loaves when you remove it before cooking.
- When the dough has risen till it has doubled in size, preheat the oven to 350 degrees.
- Cook bread for 25-30 minutes till bread sounds hollow when you tap on the top.
- Remove pans from oven and let them cool for 5 minutes.
- Then you can remove the loaves from the pan by turning them upside down and tapping gently with a wooden spoon.
How to store fresh homemade whole wheat bread?
I like to store these loaves in a simple plastic gallon size bag with a twist tie. They last for about 5 days on the counter. If I don’t think we will eat them by then, I put the extra loaves in the freezer. Then I bring them out to thaw for a few hours before enjoying that taste of freshly baked whole wheat bread again.

Freshly Ground Homemade Whole Wheat Bread
This rustic bread has a delicious sweet nutty flavor. Using freshly ground whole wheat flour makes it the best!
Ingredients
- 2.5 cups of hot tap water
- 6-6.5 cups of whole wheat flour, freshly ground from red wheat
- 1 TBSP yeast
- 1 TBSP salt
- 1/3 cup vegetable oil
- 1/3 cup honey
Instructions
- Mix together water and half of flour in large bowl or standing mixer
- Add yeast, salt, oil, and honey, mix well
- Add remaining flour, just enough for dough to be tacky to the touch
- Let rise in bowl till doubled in size
- Form into two bread loaf pans
- Let rise again till doubled in size
- Bake for 30 minutes in preheated 350 degree oven
- Cool for 5 minutes and remove from pan.
- Store in airtight plastic bag.
