Introducing the Wheat Berry Pancakes Made in a Blender
Many years ago, I was at a farmers’ market, browsing all the food and goods. I happened upon a stand where a woman was blending up wheat berries, adding a mixture of ingredients, and making it into one of the most delicious pancakes I had ever eaten. I knew I had to replicate this amazing creation! So, I went home, adjusted my favorite pancake recipe, and voila! This wheat berry pancake in a blender recipe was born.


Then, somehow, the recipe got lost, and I forgot about it. Now, 10 years later, I decided to recreate that recipe. This time, I have six children who are connoisseurs of a good pancake. They hold me to a high standard and let me know if something doesn’t taste right. I made this recipe, wondering if it would taste too “healthy” for them. Well, I shouldn’t have worried, they loved it as much as I do! Now, they prefer these pancakes to the ones I had been making with white flour.


I love finding a way to use my wheat berries I have in food storage. They are a nutritious and filling alternative to white flour.
Ingredients for Wheat Berry Pancakes Made in a Blender
Wheat Berries- I like to use hard red winter wheat berries for these pancakes. I feel like they almost have a nutty flavor which makes these pancakes taste hardy and rich. If you prefer a little milder flavor, try white wheat berries.
Milk- I use whole milk for maximum creaminess.
Sugar- White granulated sugar is my preference in this recipe and makes these pancakes easy to throw together. You could substitute brown sugar or honey as well.

Baking powder and baking soda- Make sure you have good baking powder and baking soda. Cooking with whole wheat flour makes a dense batter that needs enough leavening agent to rise.
Butter- Try to have a good quality butter. You will need to melt it before pouring it into the blender. I always cook with salted butter.
Eggs- This recipe calls for large eggs
Salt- Just a little salt to bring out the flavors


Instructions
My favorite thing about these pancakes, is how quickly they come together in the blender.
Step 1
Add the wheat berries and milk into a good quality blender. Blend on high for 2-4 minutes, depending on your blender. I use this Vitamix and absolutely love it!
Step 2
Melt your butter and add it directly into the blender along with sugar, baking soda, baking powder, salt, and an egg.


Step 3
Do not overmix! Just blend the ingredients for a few seconds to combine together.
Step 4
Cook pancakes on medium-low heat in preheated skillet or pan. Use butter or cooking spray to prevent pancakes from sticking.
Turn pancakes over when you see a bubble pop and not fill in on itself. Then cook other side of pancakes for about a minute till fully cooked.
I love to enjoy these pancakes with butter and warm, homemade maple syrup. If you are looking for a healthier alternative, try topping it with fruit and whipped cream.


Add ins for Wheat Berry Pancakes
You could make variations of this recipe with a few different add-ins. To bring a warm flavor, you could include 1/2 tsp cinnamon. You could also try berries, nuts, or chocolate chips. - 2 Tbsp sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 2 Tbsp butter
Instructions
- Add wheat berries and milk to a good quality blender
- Blend of high for 2-4 minutes, till it resembles a batter, with just a little texture
- Melt butter
- Add butter, sugar, baking powder, baking soda, salt, and the egg to the blender
- Blend for a few seconds till ingredients are incorporated
- Cook pancakes on medium-low heat in preheated skillet or pan. Use butter or cooking spray to prevent pancakes from sticking
- Turn pancakes over when you see a bubble pop and not fill in on itself.
- Cook other side of pancakes till fully cooked
- Enjoy with syrup, berries, or whipped cream.
